GF/CF Donuts

You know, it’s the simple things you take for granted before being diagnosed with food allergies. If something looks good, you eat it. Then, suddenly, you can’t anymore. I’m not sure about the rest of you guys, but it gave me food whiplash. My allergies came on slowly overtime, and I became less and less able to tolerate foods I used to be able to eat. So, my problem is, I still crave certain foods. Like donuts. The good news is, there’s a healthy(ish) answer for that craving, the fonut (fake donut). It’s not my name or recipe originally (although I did make a minor modification or two), there’s a great shop out here in Southern California (www.fonuts.com) that put out a few of their recipes, so here we go:

Vegan Lemon Fonuts

Ingredients

  • 1 cup white rice flower

  • 1cup almond meal (or fine almond flour)

  • 1 tsp baking powder

  • 1⁄2 tsp salt

  • 1 lemon zest

  • 1⁄2 cup coconut oil

  • 1 cup brown sugar

  • 2⁄3 cup almond milk

  • 1⁄/2 lemon, juiced

  • 1⁄2 tsp vanilla

Glaze:

  • 1 Tbs lemon juice (or as needed to make thick glaze)

  • 1⁄2 cup powdered sugar

Instructions
Mix dry ingredients including lemon zest and set aside. Mix all wet ingredients except vanilla in a separate bowl and add to dry ingredients. Add vanilla after mixing dry ingredients. Bake at 350 degrees in donut pans for 12-15 min or until light and fluffy to the touch.

Pro tip: If for some reason these all aren’t gone in one sitting, make sure you refrigerate them, it will help them hold together better.

And remember, if you don’t like lemons, no big deal!  Just don’t add the lemon zest and keep it plain.  You can make the glaze using almond or rice milk instead of lemon juice, but you might want to add about 1/2 tsp of vanilla flavoring to give it a little extra taste.  I’m pretty sure you could do pretty much any flavorings you wanted with this donut recipe, but I haven’t had time to try all of the options yet.

And here’s the cool thing: I think these fonuts are even better than the real donuts I used to eat.  Don’t believe me?  Give one a try!

Any recipes you’d like me to try to pull off?  Let me know and leave a comment at our facebook page.  I can’t promise success, but I’ll see what I can do.
